  • For 50% egg substitution: 8 grams of T-Lin and 130 ml of water.
  • Alternatively, use 4 eggs.
  • 50g sugar
  • 350g flour
  • 175g butter, softened
  • 5g dry yeast
  • 2 tbsp. warm water
  • 1 tbsp. salt

Equipment needed

A mixing bowl, a rolling pin and a baking mold. That’s all!

Start to bake!

  1. Start by activating the yeast: dissolve it in warm water and let it sit until frothy.
  2. In a separate bowl, whisk together T-Lin and flour.
  3. Combine the yeast mixture, T-Lin and flour mixture, and all remaining ingredients. Stir until a cohesive dough forms.
  4. Transfer the dough to a bowl, cover it with a damp cloth, and allow it to rise at room temperature for 1.5 to 2 hours.
  5. On a floured surface, knead the dough briefly, then roll it into a large rectangle with a rolling pin.
  6. Fold the dough into quarters and roll it out again. Shape it into a log and divide it into 8 equal pieces.
  7. Arrange the pieces in a buttered and floured baking mold.
  8. Allow the dough to proof again for about 1 hour at room temperature until puffy.
  9. Preheat your oven to 250°C.
  10. Bake the brioche until it’s golden brown and sounds hollow when tapped.
