Ingredients for this brioche bread
- For 100% egg substitution: 16 grams of T-Lin and 250 ml of water.
- For 50% egg substitution: 8 grams of T-Lin and 130 ml of water.
- Alternatively, use 4 eggs.
- 50g sugar
- 350g flour
- 175g butter, softened
- 5g dry yeast
- 2 tbsp. warm water
- 1 tbsp. salt
Equipment needed
A mixing bowl, a rolling pin and a baking mold. That’s all!
Start to bake!
- Start by activating the yeast: dissolve it in warm water and let it sit until frothy.
- In a separate bowl, whisk together T-Lin and flour.
- Combine the yeast mixture, T-Lin and flour mixture, and all remaining ingredients. Stir until a cohesive dough forms.
- Transfer the dough to a bowl, cover it with a damp cloth, and allow it to rise at room temperature for 1.5 to 2 hours.
- On a floured surface, knead the dough briefly, then roll it into a large rectangle with a rolling pin.
- Fold the dough into quarters and roll it out again. Shape it into a log and divide it into 8 equal pieces.
- Arrange the pieces in a buttered and floured baking mold.
- Allow the dough to proof again for about 1 hour at room temperature until puffy.
- Preheat your oven to 250°C.
- Bake the brioche until it’s golden brown and sounds hollow when tapped.
